It’s time to give the humble cheese on toast an upgrade.
For something comforting during these dark, cold, and hungover evenings, try this recipe inspired by Bulgarian cuisine.
It takes next to no time to make and is that bit more special than your regular cheddar slabs grilled onto bread.
On the Instagram account The Modern Nonna, the chef writes: ‘This recipe goes out to my family, in particular my Dad, this is HOME for me and what we call “Prinzesi” in Bulgaria.
‘We have many different versions back home but this one is one of my favourites.
‘Every morning I would wake up in Bulgaria my dad had these on the table with fresh tomatoes on the side for breakfast and it’s something I look forward to when I go there every summer.
‘These are the most incredible feta, egg and cheese toasts or “sandwiches” as we like to call them.
‘If you have never tried anything like this I highly recommend it and to be honest, what’s not to like about feta and cheese on buttered bread lol.
‘I am drooling already so let’s get started as this couldn’t be easier.’
Ingredients
- 4 pieces of rye bread, lightly buttered
- 2 medium eggs
- handful of any feta, about 1/3 cup
- handful of any grated cheese, about 1/2 cup
- pinch of salt
- dry oregano
You can swap the feta for goat cheese if you don’t like it.
‘We don’t measure so add as much cheese and feta as you like. I use Bulgarian cheese (Kashkaval) but feel free to use cheddar or even mozzarella.
‘Any cheese you love will work. Please keep a very close eye on them because they can easily burn on broil. I suggest checking every minute or so until they are golden,’ she adds.
